In Saigon's alleyways, the rhythmic knocking of bamboo sticks on a wooden bowl once announced the arrival of the late-night noodle vendor. That knock — "tieng go" — is the heartbeat of Hu Tieu Go Ong Map.
We brought that heartbeat to 138 Mitchell Street, Maidstone. What started as a beloved tradition in Vietnam's street food culture has become one of Melbourne's most cherished Vietnamese dining experiences — a place where the community gathers over steaming bowls, fresh snails, and good company.
