About this dish
Babylonia snails are the sweet, tender ones — and butter is what they were made for. We build the sauce with garlic, chilli and fish sauce until it is glossy and clinging, then toss the snails through it off the heat so they never toughen. Pick them out with the toothpick, then deal with the sauce separately.
