About this dish
The course that opens the feast, and the one guests ask about afterwards. Silken tofu is fried until the outside forms a thin, crisp shell, then coated in salted duck egg yolk cooked down with butter until it turns sandy and gold — kim sa, "golden sand". Crispy shallots over the top for perfume and crunch.
