About this dish
This is the bowl the restaurant is named for. Hủ tiếu gõ got its name from the sound of bamboo sticks knocked together down Saigon's back alleys after midnight — the signal that the cart had arrived. Our broth simmers for hours on pork bone with dried squid and white radish until it is clear but deep, then we build the bowl the way the carts do: rice noodles, sliced pork, our own beef balls, garlic chives, and the crackling pork fat that makes the whole thing sing. Nothing here is a modern interpretation. It is just the real thing, made properly.
